Pan-fried flounder and pickled Jerusalem artichokes

Ingredients (for 2 people) :

  • 500 g Jerusalem artichokes
  • 2 flounder fillets
  • 1 tbsp. flour
  • 1 handful slivered almonds
  • 1 shallot
  • 1/2 lemon
  • neutral oil (rapeseed)
  • salt and pepper

Preparation:

Wash the Jerusalem artichokes and steam for around 20 minutes. Let them cool slightly before peeling, without burning yourself. Cut roughly into pieces.

Prepare a vinaigrette by mixing lemon juice, oil, salt and pepper to taste, with the finely chopped shallot.

Lightly flour the flounders and wait until the pan is hot before placing them in it. Cook for 5 minutes on each side. They should turn a nice golden color, but not stick. Remove from the heat and keep warm. Immediately throw a handful of almonds into the hot pan. Brown them quickly for a few seconds, without burning them.

Arrange the dabs with the roasted almonds and Jerusalem artichokes on serving plates. Pour the vinaigrette over the warm Jerusalem artichokes. Serve immediately.
