Ingredients ( for 2 pers. ) :
- 2 oak truffles
- 4 eggs
- olive oil
Preparation:
Brush and clean the truffles in cold water, then dry them.
Peel the truffles and cut into thin slices using a mandolin or truffle plane, then crush the skin in a mortar and pestle.
Break the eggs (2 per person), beat for 5 minutes and add the truffles. Mix well.
Pour the mixture into a very hot frying pan greased with olive oil, stirring constantly with a spatula until the eggs set.
As soon as the omelette is slushy, serve immediately on warmed plates.
Tips:
As truffles are expensive, they can be replaced by other mushrooms. Of course, they won't be as tasty.
