Wilted dandelions

Preparation time: 5 min.   Total time: 10 min.

Ingredients (for 2 servings):

  • 1 lb (450 g) dandelion leaves
  • 1 pinch nutmeg
  • butter, if using
  • salt, if using

Preparation:

Wash dandelions. Remove woody stems.
Heat a large sauté pan over high heat. When hot, add butter and allow to foam.
Stir in the salt and nutmeg, then add the dandelions. Cook, stirring, until the dandelions are completely wilted but not brown.
Remove and drain on kitchen paper until ready to serve.

Tips:

Serve with honey-braised beef ribs and parsnip purée.
