Preparation time: 15 min. Total time: 30 min.
Ingredients (for 4 people) :
- 180gr puff pastry (if you buy it already made, take the rectangular one)
- A little flour for the work surface
- 4 tablespoons pesto
- 2 tomatoes, sliced
- 125gr ricotta cheese
- 8 black olives, pitted and sliced
- 2 tablespoons grated Parmesan cheese
- freshly ground pepper
- 2 sprigs fresh basil
Preparation :
To prepare the cushions: Roll out the dough on a floured work surface to a thickness of about 6mm. Cut into 4 rectangles measuring 11cm by 18cm. Use a pastry or pizza cutter to get the perfect shape.
Cooking: Preheat oven to 200°. Place the 4 rectangles of dough on a baking sheet lined with parchment paper, then prick them evenly with a fork. Place in the fridge while the oven warms up, then place in the oven for 10 to 12 min. Let cool out of the oven, but leave it on.
Finish: coat the cushions with pesto, then top with tomato slices, ricotta, olive slices and grated Parmesan. Season with pepper and bake for a further 3 min. Remove from oven and garnish with basil.
Tips :
Vary the composition of the garnish:
- Fresh cheese with garlic and herbs, smoked salmon strips and fresh dill.
- Roquefort cheese and pear slices in syrup, a few walnut kernels and honey.
- Mascarpone cheese, arugula, red onion rings and a drizzle of balsamic vinegar.
