Ingredients (for 4 people) :
- 200gr feta cheese
- 1 tablespoon olive oil
- 1 teaspoon oregano leaves
- salt and freshly ground pepper
- 1 lettuce heart
- 4 sliced tomatoes
- 1/2 cucumber, cubed
- 1 small red onion, thinly sliced
- 20 pitted kalamata olives (or black olives)
- 1 tablespoon tahini (sesame paste)
- 1 tablespoon lemon juice
Preparation:
1. Marinate the feta: crumble the feta into a bowl, drizzle with olive oil and add the oregano. Season with pepper, and leave to macerate for at least 1 hour in a cool place.
2. Prepare the salad: Wash and spin-dry the salad, chop it and divide it between the serving plates. Add the tomato slices, cucumber cubes, red onion rings and olives.
3. Prepare the seasoning: Drain the feta, reserving the olive oil marinade. In a bowl, mix the tahini with the lemon juice, salt and pepper. Emulsify with the reserved marinade.
4. Finishing: Drizzle the dressing over the salad, toss gently and add the feta cheese. Serve immediately.
Tips :
For a typical Greek flavor, replace the lettuce core with 100gr arugula or purslane.
