Ingredients (for 8 tartlets) :
Sweet pastry
- 1 egg
- 250 g flour
- 30 g pistachio powder
- 90 g powdered sugar
- 120 g soft butter
Pistachio cream
- 1 egg
- 50 g soft butter
- 50 g pistachio powder
- 50 g powdered sugar
Lime cream
- 2 eggs
- 100 g lime juice
- 1 g gelatin
- 75 g sugar
- 100 g butter
Preparation :
For the tart dough:
Whisk together the soft butter, sugar and pistachio powder.
Pour in the egg and continue mixing
Add the flour, mixing by hand. Do not overwork the dough, or it will be tough after baking.
Wrap the dough in cling film and chill for 1 hr.
Flour the work surface and roll out the dough to a thickness of 0.3cm
Line pie tins with pastry and freeze for 15 minutes.
Preheat oven to 180°C
Bake for 10 minutes
Pistachio cream:
Mix together soft butter, powdered sugar and pistachio powder.
Stir in egg
Spread over tart shells.
Return to the oven for 12 minutes, still at 180°C
Leave to cool
Lime cream:
Soak gelatine in cold water
Mix egg and sugar
Add lime juice and mix
Heat until thickened.
Remove from the heat and stir in the gelatine.
Add butter in small pieces and mix
Fill tartlets and chill for at least 4 hours.
