Ultimate lemon cake

Preparation time: 20 min.   Total time: 60 min.

Ingredients (for 8 people) :

  • 250gr white flour
  • 200gr sugar
  • 1 sachet baking powder 
  • 3 eggs 
  • 120ml lemon juice (about 3 lemons)
  • zest of 2 lemons
  • 100gr melted butter
  • 100ml milk
  • 1 pinch salt
  • 100gr powdered sugar for the glaze 

Preparation :

Preparing the dough
Whisk eggs and sugar until frothy.  Add lemon juice and zest, melted butter and milk. 
Add dry ingredients:
Gently stir in flour, baking powder and salt. 
Baking
Pour the batter into a buttered tin and bake at 180°C for 40 minutes. 
Glaze
Mix the powdered sugar with a little lemon juice to obtain a thick enough paste to coat the cake. 
Presentation
Once the cake has been baked and cooled, coat with the powdered sugar and lemon juice mixture and leave to set. Cut into slices and serve. 

Tips :

Lime, orange, tangerine, grapefruit, blood orange or pomelo variations are also available.
