Caldo verde (green broth)

Preparation time: 15 min.   Total time: 45 min.

Ingredients (for 6 people) :

700 g potatoes
300 g Galician [*] or green kale, finely chopped
2 onions
3 cloves garlic
6 tbsp. olive oil
1 nice chouriço or liguiça (spicy sausage), otherwise 1 Spanish chorizo
2 liters of water
salt

Preparation:

Peel and wash the potatoes, leaving them in a little cold water. Do the same with the onion and garlic.

In a casserole, cook the potatoes, onion and garlic in 2 liters of salted water with the chouriço and 3 tablespoons of olive oil.

Meanwhile, wash and finely chop the cabbage. Squeeze it dry.

When the potatoes are cooked, remove the chouriço and mashed potato them. Keep the soup warm over low heat.

Fifteen minutes before serving, add the well-washed cabbage to the broth and leave to cook.

Place 1 slice of chouriço and 1/2 tablespoon olive oil in each bowl, then pour in the soup.

Tips :

[*] Due to the difficulty of finding Portuguese kale - Galician cabbage: couve galega - it may be necessary to replace it with kale. In this case, finely grate the large leaves and blanch for just a few moments.
