🐓 The return of free-range eggs: why they're nothing like industrial eggs

Eggs are a staple in our kitchens. It binds sauces together, puffs up cakes, garnishes toast... but not all eggs are created equal. Behind the same exterior there are huge differences in taste, quality and, above all, origin. And that's where free-range eggs come into their own.

🌾 What is a free-range egg?

A free-range egg comes from hens reared in conditions that respect their welfare, often in the open air, on human-sized farms. Unlike industrial eggs, the hens are given space, natural light, a variety of feed (often enriched with local cereals or grass) and a rhythm of life that respects their needs.

The result? Eggs with a stronger flavour, more resistant shells and often brighter yolks. Eggs that tell a story: the story of close, transparent and sustainable farming.

Buying eggs from a local producer is much more than a simple consumer gesture:

  • Taste: Many egg lovers will tell you that free-range eggs have a real taste. The yolk is creamier, and the whites hold up better when cooked.
  • Respect for the animal: These farms focus on the comfort of the hens, without heavy industrial practices. Some even go so far as to adopt local, hardy or ancient breeds.
  • Support for local farming: Each purchase from a producer closes the virtuous circle of short circuits, and recognises the efforts of passionate men and women.
  • Reduced environmental impact: Less transport, less packaging, fewer intermediaries. The egg may only have travelled a few kilometres to reach your plate.
  • Traceability and transparency: You can often visit farms, ask questions, and really understand where your food comes from.

🍳 How can you identify them?

At markets or via the Farm'in app, you can easily spot local producers of free-range eggs. The packaging may be simple or even non-existent (remember to take your reusable boxes!), but the freshness and quality are there.

Some producers clearly display their practices: hen feed, breed type, rearing methods. And many are delighted to talk to their customers.

The free-range egg can be used for everything: hard-boiled, soft-boiled, scrambled, in quiches, pasta dishes, sabayons, etc. A tip: to really appreciate the quality of an egg, simply eat it hard-boiled or fried, with a little fleur de sel. You'll see (and taste) the difference.
