Ingredients ( for 4 pers. ) :
- 1 knob butter
- 450 g rye bread
- 75 cl white wine (Dôle du Valais)
- 3 tbsp raisins
- 2 tbsp elderberry syrup
- 25 cl whipping cream
Preparation:
Take a loaf of Valais rye bread, well stale. Soak in a bottle of Dôle du Valais. Leave for at least 1/2 day, until the bread is perfectly impregnated with the wine.
Then knead by hand to obtain a sort of liquid paste, as smooth as possible. Add the raisins and sweeten with the elderberry syrup.
Heat a little butter in a small saucepan over low heat. Add a large ladleful of the mixture and stir it into the butter until it reaches a temperature of 60° to 65°. Do not exceed this value, as this will remove all the alcohol from the wine, leaving the mass with its characteristic taste. Repeat this operation with the rest of the preparation.
Serve in bowls, topping each portion with freshly whipped sweetened whipped cream.
