Rice and coral lentil curry with spinach

Preparation time: 15 min.   Total time: 45 min.

Ingredients (for 4 people) :

  • 240 g brown rice
  • 150 g coral lentils
  • 5 to 6 frozen spinach cubes
  • 1 onion
  • 2 cloves garlic
  • 2-3 slices fresh ginger
  • 1 tbsp. curry powder
  • 1 heaping tablespoon coconut oil
  • 5 cups water
  • 25 cl tomato coulis
  • 1-2 tbsp. fresh or vegetable cream

Preparation:

Peel garlic, ginger and onion. Blend the garlic and ginger, then the onion separately.

Melt coconut oil in a saucepan. Add the blended garlic and ginger. Allow to brown. Add onion and curry powder. Allow to brown. Add tomato coulis.

Place rice and rinsed lentils in a saucepan or rice cooker. Add the sauce obtained in the previous step. Add spinach and water. Mix well.

Leave to cook for 30 minutes and enjoy your aperitif (optional) until ready.

Once cooked, add the cream for extra binding power.
