Carrot and goat pancakes

Ingredients (for 2 people):

  • 2 glasses of rice flakes
  • 2 glasses of soy milk
  • 2 eggs
  • 2 medium carrots
  • herb salt, pepper
  • caraway (or fennel) seeds
  • 75 g fresh goat's cheese or sheep's cheese

Preparation:

Place the rice flakes and soy milk in a salad bowl.

Crush goat's cheese (or grate sheep's cheese).

Grate carrots.

Add cheese, carrots and beaten eggs to the salad bowl.

Season with herb salt, pepper and two or three pinches of caraway or fennel seeds.

Mix all ingredients well and, if possible, leave to stand in a cool place for one to three hours.

Drop by large tablespoonfuls into a large, lightly oiled frying pan, flatten to form patties, cook over medium to low heat, turning to brown the other side.

Serve with a green salad.
